Mussels in iKi Beer

iKi beer gives this classic dish a refreshing oriental twist.

Ingriedients:

  • 1 bottle iKi Beer
  • 1 kg Mussels
  • handful of Thyme
  • 50 gr celery
  • 50 gr carrots
  • 50 gr leeks
  • 1 clove garlic
  • 2 bay leaves
  • 20 grams of parsley
  • Salt and freshly ground pepper
  • 25g unsalted butter
  • Wasabi to taste

Preparation:
Wash the mussels in plenty of cold water. Having washed the mussels scrape off any barnacles and pull out any scraps of ‘beard’.

Cook the chopped vegeables in the butter in a large pan until tender without browning. Now add the beer and bring to the boil. Simmer for 5 minutes. Raise the heat high and tip in the cleaned mussels. Put on the lid and shake the pan gently until the mussels open, about 5 minutes. Discard any that stay shut. Add wasabi to the liquid, turn and serve immediately.
